Well, first - way to judge a book by it's cover! Personally, I don't care what the service tech looks like that's working on my car - I care that they know their job, and do things right (which you are likely more apt to get at a dealer). You wouldn't do well if you shy away from shady looking characters in the southwest! You'd have nowhere to go
For oil, keep in mind Subaru doesn't make oil. at all. they contract to someone to make the oil for them, and put it in a Subaru container. I am sure if your google-fu is strong, you can sort out where they get it. That being said, there are lots of good choices out there - some folks like Castrol Edge 0W30 ("german castrol") or 0W40 (also made in Germany, but used to be Belgium, iirc). Some folks like a synthetic diesel oil (Rotella T6 - it's a 5W40, I think). And more than a couple use Mobil 1 or Valvoline synthetics, too.
What engine do you have? How do you drive it? How often do you want to change it? What do you use for filters?
As already pointed out, most synthetics are really good. And also - most folks here do their own work (I can't even imagine bringing my car in to the dealer for a timing belt, much less something trivial like an oil change!)
