Reuse the head bolts. You don't have to mark them. Just clean them up with some break clean and make sure you don't put them back in dry. Wipe them down with a little bit of fresh oil first.

From what i've read, despite mixed opinions general consensus is to get new head bolts. If I went to the effort to pull the heads and found some coolant had leaked in i'd probably do a full clean out...

Temp sensor or stuck open / missing thermostat

If the thermostat is missing, it may be be because its being used to cover up overheating from head gasket problems from the previous owner.

Could be the temp sensor for you gauge is bad. There are two of them, one for the gauge (one wire) and one for the ECU (two wire). If you have a code reader with live data you can read the temp data...
