What's the actual difference between the USDM and JDM bumper?

That can work yes, although you can also just tap into the power, earth and ignition wires of the OEM stereo. Mine still works, though there is obviously no sound as my speakers are all amplified.

I did my own. If you've worked on stereos before, it's very simple.
