View Full Version : The "Charcoal vs. Gas Grilling" Battle Thread!

Message from Brady: This just TOTALLY deserved it's own thread!

Sorry, I had to! ;)

We now return to our previously scheduled battle...

------------------------------------------------------------------------------------------

with beef, I'll sear in a cast iron skillet in some light oil, then put it on the grill on low heat, turning once.

with chicken, I get the grill up past 700F with all four burners going. I put it on for 30 seconds, get a nice sear, then flip it over on one side of the grill, turning the burners on that side down to the lowest setting, leaving the other side up higher to maintain 350F or so. Basically, this bakes the chicken. To serve, I flip the chicken over one last time to the hot side to get the crosshatching for presentation.
Fail for using gas

It's not just that - it's the specific control I can get over my cooking surface which makes my gas-grill wonderful. First off, it's a Weber...FTW...secondly, it's practical, fast, and easy. :)

Charcoal is fine; got no problem with charcoal grills. I might even buy one someday. But - I'm more into having food done quickly, than waiting for coals to get hot. :)

No you don't. The coals get as hot as they are going to get. You're a purist for the sake of being a purist, not because charcoal is really better. You can't "prove" your coal grill is better. You can't even define what "Better" means.

If I want to BBQ, I'll get a wood or coal-fired Grill. Since I rarely BBQ, my Gas Weber works beautifully.

You sound a bit like Vimy in his "spec.B's are the bestest!" rants.

What am I arguing, Vimy? I'm arguing against your ignorant claim "Charcoal is Better." You can't explain what "better" means. You said 'better taste' - better taste than WHAT? Under what circumstances? What style of cooking? What product? The ONLY thing I'm arguing, Vimy, against your insane superiority complex all based on the fact you don't LIKE gas grills. I'm NOT making a claim of supremacy, I'm saying for my needs, my Gas grill does a GREAT Job; It works better for ME than a Coal grill would. Look Vimy, I see you like Charcoal Grills. Fine. Don't embarrass yourself by insinuating gas grills some how SUCK simply because 'prefer' or own a coal grill.

I used to grille on the oldest pice of junk you've ever seen. I think my family paid 200 bucks for it almost 20 years back. I took it from my mother when I moved out about 10 years ago.

It was a 'broil-mate' propane BBQ, IIRC.

I used it up to last year, then I took possession of a far superior:rolleyes: used propane BBQ. I think this one's only 10 years old and probably costed 250 bucks back then.

My buddies would weep when I threw BBQ parties in my back yard. Half of them would haul their own BBQ's over to the party in the back of trucks.

darkfox1

I have a charcoal grill and have used gas, I dont have a problem with gas. Heat on demand, easy to control, off when you say so..

charcoal to me tho.. I dunno.. the smell it gives off, the warm up time, spreading coals out when they're ready, something about it to me is what makes the experience. A gas grill is like.. cooking on your stove.. outside.. but I have a gas stove so that may be why I feel that way.

I might buy a nice gas grill one day, but for now, its a charcoal grill... infact I might buy a new one soon as mine is starting to feel the effects of the weather after a few years of sitting outside.. its not a weber or anything like that.. but it gets the job done.

If it lights on fire and works I'll use it. I prefer the way charcoal fired meat tastes, but the convenience of gas is also nice.

What I find to be the most interesting aspect of this thread is that an older member of the boards (RC-Cola) and a very new member DMP, can both agree that Vimy is a tool bag. Especially impressive on DMP's part for picking up on this fact so quickly.

Had charcoal, moved to gas (4burner, smoking tray, cast iron grates) - all seems to be an upgrade to me. I get the "flavor" I want by adding different chips to my smoke box. I like the ease as well in cold weather.

...latest thing to add to the grill - green onions and asparagras (cover in olive oil and jane's crazy salt) great as a side to just about any dish, salad, salsa, etc.

My point exactly. Yes my grill is nothing but my stove outside. But for convenience, nothing beats my gas grill. I am getting a 2nd Weber to put right next to the 1st. Built-in units of any good quality are still out of my price range.

Maybe then I can have a BBQ with all you clowns.

for the record (cos I'm a stickler on this.) to BBQ means a slow even cook generally for ribs and pork.

to GRILL is a high heat situation best for chicken hamburgers or steak.

when you cook burgers outside on the girll that is NOT a BBQ! thats a GRILLOUT.

Gas is the only way to fly. Precise control and even heat. You want flavor, use wood chips or a smoke box. My grill has 4 burners. I can cook at any temp between 275-600* degrees. It also has a side mounted rotisserie burner that cooks chicken or roasts to perfection. Self basting and worry free. This way I can spend time with my guests instead of being tied to the Q worrying about hotspots or burning food.

My neighbor swears by charcol. I just laugh at him. My grill is up to cooking temp in 5 min. Steaks are done in 10. We are eating perfectly cooked meat, tender, moist with superb flavor..... by the time he has cleaned his grill and lit his charcol. There is no loss of grilling experience, and I don't smell like smoke when I'm finished.

Clean up is a snap - no ashes or coal to deal with.

Wow, two completely different aspects of life. Who compares sex with grilling?

Come on, you know what I'm talking about. Grate has to come off, you get a garbage bag and put it over the top before flipping the grill over in the air to get it clean. Ashes and dust flying everywhere. Your hair and clothes smelling like smoke. Yea, thats how I want to spend my time. Since I don't have to spend time cleaning the grill, I have more time to spend with my wife, but I guess you'd rather spend time cooking and cleaning instead of taking care of what's important. Gas is a convenience.

I will say I dont have a problem with a gas grill.. but I still prefer the taste and experience of grilling with charcoal. It doensn't take long at all to heat up.

oh.. and pretty much every charcoal grill thats more than $2.99 has a trap below it.. you dont have to tip it over.. thats absurd.. been a year or 30 since you used charcoal? the traps have adjustable air baffles just like the top. Even a cheapy has this stuff, albeit not very well made. I take the grill off with the scraper so I dont have to touch it and hang it on a hook that my home's previous owner put in (only thing he did worth a damn) then pile the matchlight (yes I like matchlight!) light it around the edges, then put the top back on to heat it up. Then when it gets the bars warm I scrape them clean, take it back off, spread em out and put it back on. The whole process takes less than 30 minutes and I dont get dirty from it, mnaybe just my hands from initially putting the charcoal in the pyramid.

to be fair tho.. if I had a pontoon boat, I'd only want gas on it. I'd also wish my neighbor to get a gas grill so he'll stop setting the leaves on his deck on fire when the trap overflows. If I had a nice house or a nice back patio I'd want a built in and it'd have to be gas. Charcoal I always think of the small black webers with wheels (like I have.) not anything "high end" although some disagree with me there I'm sure.

obviously we have to agree to disagree on this kind of thing. its all preference.. its kinda like sayign ice or no ice in cold soda. (no ice!)

i don't worry about ashes..... built a firepit/grill with a removable wall so i can just shovel the ashes out rite into the garden(3 steps away) as fertilizer. so i kill two birds with one stone. i get a healthy garden and get rid of ashes.

and who leaves the grime on a grill after they are done cooking to let it set. i scrape mine clean while the coals are keeping it hot and it comes clean quick and i am done cleaning in less than 5 minutes. then when i need to grill again just a quick rinse with warm soapy water and a wirebrush and done.

i think also how u treat grilling/backyard bbq (in the average joe blow sense of bbq) is how you choose what is better.

when i do anything with the grill i treat it as more of a get together, than just eating. its all about what u do with your friends while the food cooks is more fun to me than the eating itself.

if i wanted quick grilled food, i just goto my george foreman grill. no watching the heat or flipping food. for me it is all about the experience, not the act of cooking. so that is why i prefer charcoal over gas.

+11111! I NEVER grill by myself. I go out of my way to grill on most if not all social occasions however. Eating is a side benefit of grilling.

it can be said tho that turning the heat down on a gas grill can still have a social experience.

On that note mesquite or hickory > charcoal > gas, as far as taste.

Knight705
03-21-2008, 05:59 PM
well... that part is obvious.... hahahaha the other two just bring heat, while the hickory/mesquite bring flavor aroma/smoke into the picture.

Charcoal brings smoke/flavoring and heat, but if given a choice I will take the hickory or mesquite for flavor. Charcoal is often made from hickory though, so it does have some of that flavor potential.

+1 to a wood-fired barbecue. I love the taste of the oils that come out of the wood. It seems to require the most attention however getting the embers to the right point where you don't have too much fire, but it hasn't burned down too much. It's a fine line, but it pays off.

The big advantage with charcoal is the fact you have lighter fluid to squirt on the hot coals. Fire, fire, fire!!!! Uhh, huh, huh.
That makes the food taste like shit

Well I looked a little more into it, it is still gas powered, but the flames are very small and dispersed. They are underneath a infrared plate, not sure exactly what that does, but they do have some great reviews. Anyone have one?

I have to throw in my $.02 now that I've read 6 pages....

Charcoal is a cheap initial investment and gives great results. A $25 charcoal grill gives you better taste than a $300 propane grill.

HOWEVER if you get a HIGH quality $800 up gas grill I feel the scales start to tip. As said before if you want the flavor you can adjust to whatever you want. It heats up quick.....

Thin of the charcoal grill as the LGT of grills. The best bang for your buck, it gets the job done well and does what you want it to better than the competition at similar prices....

As for BBQ... I'll never understand that, I thought I did, then I moved to NC and now apparently there is a difference in the damn CITY it comes from... Lexington is better than Hickory.... people will never agree!!

go to a high end steak house and see what they use you won't find any charcoal. :) heat is heat whether it's gas, charcoal or electric.

I still think there is nothing like cooking a steak over an open fire out in the desert to munch on at like 2am...

FWIW I haven't read the previous 5 pages in this thread.
Lump charcoal FTW.
Haven't used lighter fluid since the early 80s, newspaper in a charcoal chimney is the best and fastest.
Steak places don't use charcoal because to the high volume, but how many gas grills do you see at national BBQ cookoffs?
Infrared is great for searing steaks.
Charcoal is a slow grind with your wife, gas is a quicky with a coworker in the office supply closet. It's your preference.

watched the gas vs charcoal grill debate on the Discovery or History Channel where they tested the two to see what the best was. bottom line was red meat charcoal, white meat gas the consensus was charcoal was harder to control the heat but seared better gas was easier to control at lower heats plus it was more consistent with it's heat. the favor from charcoal/wood is caused by the steam/smoke they produce from meat drippings they said that could be done with a gas grill and lava stones.
i have friend who is a chef at a high end steak house and he said the key to steaks is high heat their grill is more like an oven/broiler it cooks from both sides at once he said it gets upwards of 700+ degrees they sear them then move to cooler part of grill.
i also agree with the other person that a high end gas grill is not a bad choice but to each his own. happy grilling.

I have a Weber kettle 21inch(I think), It does an awesome job on whole chickens. I usually do two at a time using medium size chickens. I prep them by trimming as much fat as possible, shoving a lacerated orange in the cavities and rub on top. The oranges do a great job of keeping things moist and also impart a flavor into the meat. Charcoal>Gas for this.

I have a gas grill with cast iron smoker box. add some soaked mesquite chips or cherry, and let them smoke away. gas convenience, charcoal flavor. best $8 mod I've ever spent.

better than either is 'asado', or South American slow-cooking. A stack of logs burns to one side, the hot embers get spread out under a LARGE grate holding all the food. No direct flame, only burning embers to slow cook things. A little bit of coarse parrilla salt and the wood embers does the rest of the seasoning.

Great pic PGT! My wife's family is from Argentina and we went down there 2 years ago, and what an experience that was.

Easily the best steak I've ever had, along with every other part of the cow. Everyone has the asado setup in the backyard it's quite the feast you have every single day :)

I've thought about building my own chimenea brick setup in my backyard to try and replicate the asado experience, but it's alot of work. I still to my gas grill with wood chips for smoking the flavour, and charcoal when I got out on picnics with my portable unit.

And you forgot the key sauce they use, Chimmi Churri on everything, gotta love that :)

I'm famous for my burgers. Last time I was down, everybody wanted t3h famous 'hamburgesas'. I tried to do them on the asado....failed miserably. :-( it doesn't get hot enough to sear the burgers and properly cook them. We had to pull them off and finish them in a frying pan. <blasphemy!>

That right there is the biggest difference between BBQing and Grilling. I have charcoal and love it. I have used gas also, but still prefer charcoal. :)

In light of all this thread does, to each their own in the end.
