So, it's the beginning of March in Wisconsin. (=20 degrees) and I'm hungry for steaks. My wife and I have a side of beef in our freezer and I need a good way to make steaks in the oven without them getting tough. I like a nice tender steak with a lot of juice in it. I usually don't have a problem on the grill, but the oven offers more of a challange for some reason.
Does anyone have a good way to make steaks in the oven that are nice and tender? I usually cook it medium(some pink).
Your thoughts are greatly apprieciated!

Id say better off to pan sear. Get some woostershier sauce ( i cant spell), throw in some spices, some olive oil, will be left with a great au jus, can marinate in a plastic bag with italian dressing also that comes out great. Easy to cook to the right level cause you can cut open and look just like grilling steak... save the oven for the baked potatoes if you ask me...

I made pork chops earlier tonight on my grill, he was asking how to do them inside, we do them pan seared at my girlfriends sometimes on the weekend comes out great...

George Foreman grill sucks. Best way to cook steak without a grill, fire the oven up set to broiler mode. Grab a cast iron pan/skillet and crank the stove up to high. Once the pan is up to temp, drop the steak in and sear for a minute or two on each side, then pop it into the oven for a few more minutes. If you don't know how to determine the doneness of the steak without cutting or stabbing it with thermometer, you have no business cooking steak.

Step 1: Get beer of your choice, or Whiskey.
Step 2: Consume above listed beverage.
Step 3: Grow a pair, show some sack, and fire up the grill in the cold.
Step 4: Cook tasty steaks on the grill outside in the cold.
Step 5: Enjoy tasty juicy steaks cooked on a grill over fire.
Step 6: Come to grips with the fact that oven cooked steaks suck ass.

Once it firms up it's done. I still cook with fire. I don't care how damn cold it is.

I've heard you can tell how well a steak is done by touch...me i just sear the sides enough to kill any harmful bacteria and then have at it =)

well i like my steak medium but if somebody likes it well done (not my preference but to each their own) then sometimes a little slice helps get it just right. If you try to tell people how there steak should be cooked then your just like those asshats in some fancy resturants who refuse to put salt and pepper on the table because they have seasoned the meal apropriately

For the oven:
Put your top rack up as high as it will go.
Place steaks on a broiler pan or some other pan that will allow the drippings to collect in the bottom.
Set your oven to BROIL (only the top heating element will come on.
Set your steaks in once the elements are nice and hot.
DO NOT close the oven door or your steaks will burn! Leave the oven door slightly ajar. Most ovens have a point where the door will rest open. If not stuff a heat resistant object down in one corner to prop the door open.
Cook until required doneness.
Especially fatty cuts will spurt a little bit of oil during cooking. If your steaks are right up next to the elements, you may get a little smoke so you may want to disable your kitchen smoke detectors.

This is just absolutely right!!!!
Personally, I use a pat of butter in pan. Maybe just for 30 seconds or so a side, personally. This just locks in the juices. Throw it under the broiler until done to your liking.
I did this about a year ago as well (haven't done steaks at the apartment since). I usually like my steak medium rare, and I didn't know that oven very well, so I got the steak somewhere between medium and medium well. Normally, this would ruin the steak for me, BUT by pan searing it first and locking the juices in, the steak was still VERY moist and maintained much better flavor.
SOOO good. :)
Now you got me thinking ... I might have to do this again this weekend. :)

Get a good large cast iron frying pan.
preheat oven to 475 degrees
put pan on burner and preheat/ when hot add a Little oil to pan
brush steak with butter and flavors of choice
cook butter side down in pan until steak is seared. 4-6 minutes
flip the steak, brush with butter , put pan in oven- 4-6 minutes ~ .
Remove let sit for 2 minutes.:)

Either the broil option or the cast iron + oven, will work best. If you cant do this:
You need to make sure that you dry the meat well before cooking otherwise it will "boil" in its own juices and will turn out badly.
Best bet (if the meat is tougher) is marinate overnight, wipe dry, get a frying pan very hot and throw it in there with some S&P and a bit of oil, thats it, cook for 3-5 mins per side (dont touch it once you put it in the pan, until you are ready to flip), when it is done (should be just a bit firm to the touch but still somewhat soft this should be md rare).
After removing the meat from the heat, let it sit without puncturing it for at least a few minutes, preferably with foil layed lightly on top.
This will get you great results every time, enjoy!

The Best way to cook a steak indoors, please read carefully.
Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.
When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.
Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.) Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.
