They damn good!

How do you guys take'm?

I'm an omelet master. The key is proper heating of your pan/skillet. A n00b mistake is to get too fancy with ingredients. It's better and easier with not too much going on. Also on omelet shouldn't need to be cooked long, another mistake.

You can go the crappy diner route and just make a cheese omelet and then throw all your prepared ingredients in the middle after cooking. That's cheating. IMO. And not as delicious.

Anyway, just cleaned a plate of 2 over easy with toast. yum.

What's your egg style?

I think I'm allergic to eggs recently - they give me the 'poops'... :(

If forced to pick, though, I'd like my omelet Alton-Brown style. Nothing fancy...just simple and done-right. Good Eats.

i like to put about 3 eggs over easy with a slice of cheese on top of each other, and make a giant egg sloppy breakfast sandwich. :) quite easy to make, and it's nice and quick.

i also expect a clogged artery by 27.

Slow cooked scrambled eggs. If you can cook these well, you can cook almost anything ;)

Between a cheese omlette & an over-easy for me.

My wife makes the best omlettes. She swears you need a good pan. Afetr we got the All-Clads, the omlettes come so good. Nice even heat, easy to modulate.

Good ol' NJ diner with an order of French Toast & Bacon, with 3 over easy's on top is just about as good as it gets for me.

Over easy with runny yolk, chinese steam egg custard, or salted preserved duck eggs. any of those 3 with rice is the only way I usually eat eggs

I do very similar but would be egg whites only .... I know ghey. But I'm 35 and don't want a heart attack by 40.

Then I put slather on some Frank's Red Hot and put it on a tortilla shell and voila!! Good any time of day.

Eggs are good. I could only eat them if I make them though. (certain foods I can't eat unless I make)

Has to be a specific pan, and certain temp too. No milk, that just thins them out. I will also usually add crushed feta into my scrambled eggs.

mmm crispy bacon! bacon turns out pretty good in the oven. might wana make sure its self cleaning one too. it splaters a lot.

I'm with Jesse, diner special. 2-3 eggs over easy, gotta be runny yolks that you mop up with the toast. Throw some potatoes & crispy bacon in there with coffee & apple juice & a banana on the side. My absolute favorite breakfast.

Omelettes, I'm a fan of tomato & feta.

i want to try an "egg in the basket"

and i enjoy eggs no matter how they are prepared. i prefer over easy with a runny yolk as well, though. :)

3 eggs over easy on two pieces of toasted rye with salt, pepper, swiss cheese, and hotsauce. Drink 2 talll glasses of OJ, and about 6 or 8 strips of CRISPY bacon. followed by a camel filter and a nice sit on the porcelain throne

When I had my store I went to business networking breakfast meetings - got hooked on eggs benny there. They had a great sauce.

Our top favs:
1 - scrambled with cream cheese mostly melted into it the last minute - two pinchs of black truffle sea salt.
2 - same as above - no truffle salt, yes to smoked salmon - before the cream cheese
3 - eggs benny when we are home and feeling gluttonness - extra fresh lime juice in the sauce
4 - poached on toast that has either best foods and dijon spread or red or green chilli mustard

Key to any egg dish - the egg. Eggs from chickens in the country do not even come close to those store bought things we usually get unfortunately.

Ahmen brother, one of our barn workers has chickens and sells fresh eggs but any time I come home from school he drops off a dozen for me for free. Usually just laid that day

This is what I made this morning. Scrambled with chopped spinach, tomato, and green onion. A little cold-smoked salmon, a bagel, and a strawberry on the side.

I like eggs anyway...but prefer a good spanish omlet or a breakfast burrito.

Another fun idea that is pretty tasty is taking half a bagle, put it in the pan, cut side down, break an egg in the middle...fun for the kids.

I eat 3 whole eggs and 3 egg whites daily for breakfast. On the weekend I prepare them in some tasty fun way, during the week, I eat hard boiled on the run. Gotta get that natural protein.

that made me nuts when I was in texas. I just wanted normal breakfast & all I could get was burritos or breakfast tacos or something.

yeah me too. I actually do alot of shopping at the organic market. Obviously not for toilet paper & stuff, but for stuff like eggs, definitely.

What do people think of duck eggs? I think I tried one once and it was just extra rich, nothing exciting, but I can not remember.

Eggs get cooked a few different way here.
1. Scrambled with cheese, usually if there is green pepper ham or chorizo around we add that in.

2. Fritata- meat and a veg, going to asparagus and ham for sunday

3. Eggs on toast or 'bullseye'- Take a piece of sandwich bread. butter both sides and use a glass to cut a whole in the middle. stick in the pan to start to crisp up, then crack an egg into it (wife has me scramble her first). Cook and flip as desired. cook up the rounds as well for extra toasty goodness. Bread and egg in one!

4. Breakfast burrito- chorizo, eggs, sour cream, cheese and hashbrowns all rolled up in flour tortilla.
