Team,
Post up your fave sauces, pastes, pickles, hot or otherwise. I am a big hot sauce fan and have tried my fair share over the years. I often have to remember to ease up on the application of sauce in order not to offend the chef (usually Mrs. gireland).
Lets start with the easy one.
Tabasco, my first love. I'm sure some will flame me for adding the 'kleenex' of hot sauces, but I've been adding this to soups, gravies, eggs, etc for the better half of my life.

Second, my current fave as it's loaded with heat but actually full of flavor. Plus it's a Canadian sauce. This is currently replacing Tabasco (shhh, don't tell her!)
"Acid Rain". Highly recommended if you can find it.

Third, a sauce from the famous Patak group of England. This is their hottest pickle and is pure Indian heaven, even better than Aishwarya Rai.
"Hot Lime Pickle". Great on cold cuts.

One to stay away from is below. "Iguana XXX".
I bought a bottle a year ago, thought it was pretty good and recently got another bottle. This stuff is not too hot at all, contrary to the big marketing blurb they put on the side, and is loaded with salt.
The difference between this one and the ones above is that it's more of a citrus-fruit and carrot-based sauce, but it just tastes like MSG-in-a-bottle.
Maybe a bad batch but I won't be purchasing it again. Can't win 'em all.

HP? Another 'kleenex' type sauce but it's the best thing with corned beef hash.
I read once that Heinz bought the recipe from the original Brit group so it's probably all over the place.

Man I love hot sauce. I used to hate it until I moved to new orleans, then I fell in love. In my opinion, there is only 1 hot sauce...

I love Hot Sauce as well.

My wife used to bring me hot sauces from her travels. I think she has been to 30 states or so. I have at least 30 sauces before I told her to stop.
My favorite one out of all of them is - Mountain Man Fire Roasted Habanero. What I like about it is that the blend off flavors are so good - simple and complex that it definitely wins out over all my others. I have ordered it by the case and given it away to others. Problem is that it is so good I want to put a lot on things...butt it is soo hot it burns. I often over do it.

It's real knock you on your ass stuff, but actually has a good taste once the pain subsides. Dave's Insanity sauce is just as hot, but lacks a good flavor. It's just pain in a bottle, lol. :lol:

There is a chain of restaurants here called Sammy J Pepper's, and they have a ton of hot sauces for sale. Some of them are so hot, people have to sign waivers in order to buy them.
The best (and hottest) one they sell comes boxed in a mini pine casket, for crissakes.:lol:
Anything that is off the charts on the spice-o-meter (Scoville, IIRC???) just isn't fun to eat.

yeah. when we we're kids, we used to eat a lot of those pseudo pizzas (Jeno's, Mama Celeste, Totino's) and man, Sriracha would make that stuff edible. it seriously is the most versatile hot sauce. I like the cholula sauce too but its range is lacking.

This stuff is awesome on a scramble or omelette. It's not very hot but it's got a killer flavor. (don't buy their BBQ sauce, it's crap!)

a tavern in town sells hot beef sammich's and one of the condiments is "hot mustard" for which they are noted for. i watched them make it one day and all it is is yellow mustard with a small amount mustard seed oil added. the stuff is very hot only not a pepper hot taste :confused: it also has a real twang/taste to it. btw if they mix too much oil into the mustard it is too hot to eat. bosco
I love hot mustard! As a sandwich-eating machine, I usually go through a bottle of Grey Poupon every few months.

My friend Mark used to own Bada Bing Bada Boom hot sauce company (themed on the mafia) until he got arrested and had to fold it (irony?) His hottest sauce was Probable Cause, and it was fantastic. Even better was Mal Occhio, a little less hot but with roasted garlic. He also used to have a hot sauce store in Ptown, Cape Cod, where he would get all the hottest brands in. It was fun to stop in, get a new sauce on a chip, and see if I could keep from passing out.

Cholula is a nice, flavorful, medium sauce.
For more heat, but still with flavor, try McCutcheon's Screamin' Hornets sauce - Habanero, Tabasco, & black pepper. Ususally found at farmers markets in the Northeast & Mid-Atlantic.

I watched a great show on the weekend about the Annual Hot and Zesty Sauce competition in the USA.
"Hula Girl" came out on top for Best Overall hot sauce. Apparently it's magic. My next purchase for sure.
The famous 'Blair' of Blair's Hot Sauces garnered a crazy amount of awards too... so his sauces are the real deal. "Blair Q Heat Chipotle Slam" got a lot of air time.
Oh, the something called "The Source" is the worlds hottest, uh, substance at 7 MILLION Scoville units. Warnings and disclaimers galore... this stuff will burn your skin if it contacts it. But of course it's a great idea to eat it!:lol::eek:
Apparently a pin prick added to a vat of chili is all that's needed to turn the whole batch nuclear.

Mustard goes to the nose, new-world peppers to the tongue & throat.
Capsaicin, the active ingredient in new-world chili peppers, is used in some topical pain relievers.

I bought the one on the right last night! Cholula. Admittedly, the sauce section in my local Safeway SUCKS, none of the Blair's Sauces, or anything else interesting. But I'm glad I found something recommended from this thread.

I've made myway through 1/3 of the Cholula Sauce since May 21. I love it! Great flavor and not too hot. I find myself pouring a bit too much on everything though, much to my wife's displeasure.

I don't like overpowering hot sauces that have no taste and only heat and I don't like vinegary sauces like Tobasco. I really don't understand the appeal of Tobasco, it tastes like hot vinegar to me.

#1 hot sauce in my opinion, followed by Cholula garlic. I put it on everything and have a huge bottle here at work.
