I really like this one. The cornmeal gives it a little different texture, and it's got bacon in the batter!

crispy cornmeal-bacon waffles Bon Appétit | February 2004

Makes 6 servings.

8 bacon slices
1 1/4 cups all purpose flour
3/4 cup yellow cornmeal
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2 cups buttermilk
2 large eggs
3 tablespoons pure maple syrup
1/4 cup (1/2 stick) unsalted butter, melted, cooled
Additional melted butter or nonstick vegetable oil spray
Additional pure maple syrup

Cook bacon in large skillet over medium heat until crisp, about 6 minutes. Transfer to paper towels. Crumble bacon.
Whisk flour and next 3 ingredients in large bowl to blend. Whisk buttermilk, eggs, and 3 tablespoons maple syrup in medium bowl to blend. Add buttermilk mixture to dry ingredients; stir just until blended. Fold in 1/4 cup melted butter and crumbled bacon.
Preheat waffle iron (medium heat). Lightly brush waffle iron with melted butter or spray with nonstick spray. Working in batches, spoon batter onto hot waffle iron, spreading evenly over grid. Close waffle iron and cook until waffle is brown, crisp, and set, about 6 minutes, depending on type of waffle iron. Transfer waffles to plates. Serve with maple syrup.

there's an awesome breakfast place by me that makes bacon pancakes. They call em "piggy pancakes" :lol:

I'll have to try these waffles out.

You might also add a little malt to the recipe. Mmmmmm.

I might try malt next time.

The texture and flavor are really what makes these rock. Bacon and syrup in the waffle batter! FTW. The cornmeal makes em crunchy

sounds great. One key to home cooked waffles is the machine I have found. After we tried this one at a friends, I actually started to eat waffles at home and threw away our old POS.

Good point about the maker, we have one of the ones that flip over when you cook.

...and in the morning, I'm making waffles!

and i did, by following this recipe, only substituted out the baco' and added some whole wheat grains, ya know a good morning meal for snowboarding all day.:hide:

good recipe, the cornmeal had me worried a bit that it would break apart too easily, but it worked! :)

- i also thought maybe adding some cinnamon to the mix would be nice, but opted not to.

I add vanilla extract sometimes, but Cinnamon would be good too.

For bacon lovers, the bacon is an integral part of the recipe!

The only thing I would be worried about with adding more grains to the cornmeal is that it would have too much texture.

the way the recipe exists, the cornmeal just adds a nice crunch

the grains def add texture, but i'm one of those birdfood lovers whose bread consists of 12 grains and the waffles i get are filled with nuts, grains, and omega-3! :redface:

this is a good recipe, for all you baco' lovers i'm sure you'll enjoy this.

and good call on the vanilla extract, that would be good. i guess it depends on how sweet your syrup is - i like to use the real shit, looks like apple juice and you can drink it right out of the bottle :lol:

Wife does a whole wheat one that has applesauce, cinnamon and golden raisins. I am good for about 10 hours after 3-4 of those. Tasty, but man they stick with you.
