Spent 1993 - 2001 tending bar all around Manhattan and Miami Beach. Every now and then I'd break out a very unique recipe for various reasons. A customer would ask for something different, I'd want to impress a chick, etc.
Anyway, here's my grandest - the one I like the best. It's a tad sweet and very, very interesting to make in front of a crowd. Very tasty after dinner cordial.
The Carabinieri:
Ingredients
1 1/2 Oz Vodka
1/2 Oz Galliano
1/2 Oz Cointreau (or Triple Sec if you're on the cheap)
1 Egg Yolk - raw
1 Oz Fresh Orange JuiceThe Prep
Chill a classic Martini glass. In a 16oz glass mixer, combine the raw egg yolk (in front of a crowd), vodka, Galliano, vodka, Cointreau and O.J. Add ice, tap the stainless steel mixer on top of the glass mixer to lock it. Shake vigourously for a minute or two until all ingredients are thoroughly mixed and frothy. Strain (I like to crack open the two mixers rather then use a strainer) into the chilled Martini glass. Garnish with 1 orange wheel.
This drink rocks!!!

So the guy who lead our class is actually the bartender from a really good restaruant in NYC called Savoy
One of his signature drinks that he taught is called "the red & black"
The Red & the Black
2 oz tequila
1 oz lime juice
1 oz black pepper simple syrup*
2-4 strawberries
Muddle strawberries, add tequila, lime, syrup, and ice, shake and serve in rocks glass rimmed with sugar, salt, & pepper (1 part coarse crushed pepper, 1 part kosher salt, and 2 parts sugar).
Simple Syrup:
Regular: equal parts granulated sugar and water
Black Pepper: add 4 oz coarsely crushed black pepper to 1 quart simple syrup. Stir and refrigerate overnight. Strain and use.
This was REALLY good

For New Years, I learned how to make a few drinks:
Red Headed Sluts (my version.. not so Jager-ish)
1 part Jagermeister
2 parts Peach Schnapps
Flavor to taste Cranberry Juice
Best served on ice or extremely cold
Duck Farts
1 part Baileys
1 part Kahluah
1 part Crown
pour in that order, you may want to go heavier on the Baileys if you like it creamier. :lol:

Mixed drinks at bars and restaurants usually suck and are weak. The only place I would purchase such drinks would be at certain Chineese restaurants. One of my Favs I got the Recipe for the Zombie...Usually I would only have two. Anymore and I would be on the floor.:spin:
Zombie
2 shots of OJ
2 Shots of Pineapple Juice
1 shot light rum
1 shot dark rum Preferably Myers's Dark Rum
1/2 shot Orange Curaco
1/2 shot Sweet Vermoth
1 shot of sweet & Sour mix
splash of grenadine
Mix and Shake very well..
Pour in glass with Ice add straw and top off
with 1 shot of 151
Make sure the straw is filled with 151 when you pour.......;)

Mojito
Ingredients
2oz Bacardi Light Rum
1 Tablespoon Sugar
Handful of chopped up (cube sized chunks) Lime
Couple sprigs of fresh spearmint
Club SodaThe Prep
I like to make these in a tall, fluted parfait glass (14oz I think). Put the lime, mint and sugar in the empty glass. Muddle very well (you'll need a bartender's muddler obviously ;)). Fill with ice (small hemispherical commercial cubes work best). Pour in Bacardi - don't cheap out on $5 rum :cool:. Take your small stainless steel bar mixer, tap it on top, and shake vigorously. Top off with club soda and enjoy!

I know Heights had a rum thread but i'm not Bacardi fan
I also like a simple syrup over straight sugar I feel it absorbers better into the cold liquids. I know you are using it to "aggravate" the mint and lime but I think a mortal and pestle/ muddler (I don't have one so I use what I have) works just fine.
I have made them at home but they never turn out as well as a good bar. Maybe it is the sugar :(

There are times/places for simple syrup - I have recipes that call for it's use too. A Mojito is not one of them. Use plain old sugar for this one - comes out way better.
Oh yeah. Should have mentioned that too about the muddling. Don't overdo it on the mint leaves - absolutely correct. Thanks guys for pointing this out.
In my experience, dark rums (Meyers, Goslings, etc.) screw this drink up and make it something else entirely. Any quality, non-flavored, light rum should work just fine if you're hatin' on Bacardi.

Oyster Shooters.
Simple, use your favorite Bloody Mary recipe, add one or two fresh oysters depending on size. Use a 4oz glass.

IcePour alcohol over ice cubes into a chilled highball glass. Stir and fill with orange juice.

The Definitive Blody Mary
Ingredients
Good quality tomato juice (I prefer canned Sacramento)
Horseradish
Fresh squeezed lime juice (don't buy the bottled crap)
Sea salt
Fresh pepper
Red Tabasco
Celery Seeds (this is the key ingredient folks)
1 1/2 - 2oz vodka per serving over ice
Celery stalk and lime wheel garnishPlay with the proportions. I've never measured it so I can't tell you precisely though I make it consistently the same every time. The spice quantity is according to taste. I tend to go heavy on the horseradish and seeds - just my style. Shake well. You're better off pre-making the mix without vodka. You can make a gallon or two at a time and add to a glass with vodka and ice when called for.

One cube or so in a much smaller glass, I'm talking about 8 fluid ounces. A damn Coke can only hold 12 fluid ounces. I like my bourbon a little cooler when I drink it.
To each his own though, just don't ruin good bourbon or Scotch by putting f-cking soda in it.:mad:

Our secret - we like to infuse:
vodkas - raspberry, marionberry, cucumber
tequila - habanero
They taste nothing like laboratory flavored things like Absolute Razberry - ugh.

If you do not want to infuse your own or want someting different to mix with, here is another way to get real fruit flavored alcohols for drinking and mixing -

1. Take one Regular sized Kronik Energy drink:

2. add however many shots of Bombay Sapphire you can handle (hence the "bomb-ass" portion of the name)

TequilaQuantities for one drink:
1/2 Bottle Corona® Lager
1 Shot TequilaBlending Instructions:
Fill a glass with half a bottle of Corona
Pour a shot of tequila
Squeeze a lime wedge into the shot glass, and place lime wedge into shot
When you are ready to drink, drop the shot into the glass of Corona and chug fast

Recently got some of the Peach and white cranberry juice from the store, wondered what would be good.
Tequila, that's what.
did a mixer of the same ratio of something like a gin and tonic or rum and coke.
Mexican Sunset:
White Cran Peach juice
White Tequila (non aged, we use herradura)
Splash of grenadine or regular cranberry on top.
Friends gave us a Cream Soda and vanilla vodka mix, that was pretty tasty too.

Blood Orange Mojito
Ingredients
2oz Bacardi Light Rum
4 lime slices
Couple sprigs of fresh spearmint
Freshly squeezed blood orange juice.The Prep
Put the lime, mint and sugar in a tall chilled glass. Muddle limes and mint. Fill with ice.Pour in Bacardi. Fill with Blood orange juice. Shake. Enjoy. Very tasty concoction I had in Cayman Islands.

Also for the real quick buzz just drink the neck out of the Corona and then replace with either tequila or vodka, add a lime wedge, and flip the bottle over with finger over the opening; you can't taste either but you'll get that 2 beer buzz real quick.

Don't know what this is called, but some industry folks came into my bar last night and had me make a whole bunch of these (yes, I'm back bartending part-time for some extra cash). It's super yummy!
Espresso Martini (Needs some kind of official name)
Ingredients
1oz room temp espresso
1oz Kaluha
2oz Stoli Vanilla Vodka
Lemon Twist Garnish
The Prep
Typical Martini prep... Chill the glass first, combine ingredients in 16oz glass mixer (aka, pint glass), add ice, shake mildly, strain into Martini glass. Twist your twist to get some oil out, rub around the rim and drape twist over brim of glass. Enjoy!

Funny. Well, I've been away from the scene for 7 years and a lot of new drinks have popped up. It's strange reacquainting myself with all of them and the "kids" they have "working" behind the bar now a days ;) Redbull wasn't even around back then!

I know what you mean. Everyone's got a new favorite like redbull & vodka & they act like that was always around forever. Either that or they think the world is a better place for such a concoction :lol:
I dig the espresso martinis though but only like 1 of em.

Here's a few favs...
Jameson on the rocks
Place two 2x2 inch ice cubes in a glass and pour Jameson 12 year over ice.
Guinness
Open bottle (pref with bottle opener) pour into frozen glass, or say "Guinness" when ordering from bar.
These are trade secrets, so use them only to dazzle close friends or members of opposite sex.

My wife had this drink at Rick Bayless's Topolobampo in Chicago last week. She talked the bartender out of the recipe. We made it for a party as a ceviche pairing on the weekend.
Prickly Pear Margarita
1T prickly pear puree
1oz tequila
.5oz lime juice
1oz water
Put in shaker with ice, shake and pour in cold glass.
