Assemble the ingredients:

Chilean sweet onions, sliced paper thin on a mandolin
Cabot 50% White Cheddar
Hillshire Farms 98% fat free smoked ham (paper thin)
Eggland's Best eggs - one + one eggwhite
water
Pam non-stick spray
Adobo

Step 1: carmelize the onions...use lots of Pam!

Step 2: dice the ham and cheddar

Step 3: mix the egg and eggwhite...add some water to help it steam when cooking

Step 4: add the diced ham to the egg:

Step 5: add the egg/ham mixture to the onions (use lots of Pam! first)

Step 6: Cover!! Don't skip this!

Step 7: Wait until it's half done (first pic), add the cheddar (second pic). Cover!!

Step 8: flip it over, cover and let it finish:

Then, plate it:

Step 9: (for western NY'ers only....ketchup!)

Yeah Goya is really good, better yet is Dinosaur BBQ's Hotsauce, but you have to be in an area where you can get it (IE one of the states touching NY, unless they have finally branched out)

Dinosaur is so damn good. I have their cook book and some of their sauce recipies, albeit expensive, are unbelievably good

I did make some southern style greenbeans for Xmas dinner, along with a kickass tenderloin on the grill. $80 piece of beef. Leftover got chopped and made into even more kickass BBQ sandwiches

bacon, leftover filet mignon or hamburger (especially when done on the grille outside), but not turkey or salmon. you can make a fritatta with anything really.....sautee some onions, peppers...any veggie really and use the egg to hold it together. What makes it healthy is not using butter or oil and limiting the number of whole eggs. I try not to go more than one whole egg per two eggwhites though....it tends to be hard to keep together with no yolks mixed in.

I've gone all whites before with a couple pinches of shredded cheddar to hole them together. But mostly I do the 1 yolk per 3 eggs thing

I think u should try pan frying the ham with the onions, to give it a bit more texture and sear it a litle, and then pour eggs over it.

it's thin sliced smoked ham. I've done it that way before but it browns the bottom of the pan from the sugars caramelizing and then the pan is no longer non-stick.
